Thai Green Curry and Tofu

Several times I have tried to cook a nice Thai green curry recipe, yet I still haven’t mastered the craft. Though I am certain that practice will make me improve. On my second year anniversary I decided to make it again together with some tofu and fresh vegetables.

The ingredients I used were the following:

  • Mushrooms
  • Broccoli
  • Basil
  • Garlic
  • Tofu
  • Green curry paste
  • Coconut milk
  • Soy sauce

First off I chopped up the garlic and threw it on a heated pan with a bit of water. No oils used here.

After stirring the garlic it was time to put in the mushrooms.

When the garlic and mushrooms were stirred fried enough I added the broccoli.

The Thai green curry paste was next. I mixed and stirred until the paste was covering all of the veggies. It started to smell so good!

It will start smelling even better after adding the coconut milk. Very creamy!

At last I added in the sliced tofu and a bit of soy sauce. Next time I will definitely cut the tofu into smaller pieces. Don’t forget the basil. Added that into the mix as well, but no picture of it.

I served the dish along with some white rice and the boyfriend was very pleased :). It was so tasty, yet so easy to make. You really don’t need tons of ingredients and herbs to make a wonderful and satisfying creation on your plate.

If you have some tips for me on what to add and how to create a Thai green curry please let me know in the comments! I noticed that I have to thicken it up more. But yeah, all tips are welcome!

    Hi kriss what kind of Thai curry past you used? Bc I didn’t found yet a vegan Thai curry past in holland

      Hello Balén, I bought my curry paste in the Albert heijn. It is called Koh Thai Green curry paste. I hope to make it myself soon 🙂
